Iri Kiofte is a traditional recipe that marries the special flavors of oatmeal and dried plum, creating a unique dish with deep aromas and balanced sweetness. Its preparation requires patience and care, while the result is extremely enjoyable.

Materials

  • 1 cup of oatmeal
  • 1 dry onion, finely chopped
  • 10 dried plums
  • ½ tsp. pepper
  • ½ cup of oil
  • 1 cup of tomato sauce
  • 4 tablespoons of flour
  • ½ tsp. salt

Execution

  1. Sauce preparation: Heat the oil in a saucepan and sauté the chopped onion until soft. Add the tomato sauce and half a glass of water. Let the mixture simmer until the sauce thickens, then add salt and pepper. Remove from the heat.
  2. Preparation of the Pliguri: Boil the bulgur until it absorbs the water and softens slightly. Add 2 tablespoons of the sauce and the flour and mix well. Knead the mixture and shape into small balls, similar to yuvarlaki.
  3. Cooking: Place the bulgur rolls in the pot with the remaining simmering sauce. Allow the mixture to simmer for about 30 minutes, until the yuvarlaki are well cooked and the flavors are integrated. Add the plums and bring to a boil with the yuvarlaki.
  4. Final Preparation: Once the yuvarlakia are ready, remove the plums from the pot, crush them and add them back into the sauce, stirring well to give the flavour and sweetness to the whole dish.

Enjoy the Iri Kiofte hot, with the aromas of the plum bringing out the flavor of the brioche and the sauce blending perfectly with every bite.
