Kasa with Meatballs

Kasa with Meatballs is a unique traditional dish of Macedonian cuisine, combining juicy meatballs with an aromatic, vinegary sauce. This recipe offers rich flavours and textures, creating an excellent dish ideal for family dinners and gatherings.

Ingridients

For Kasa

• 2 tablespoons of flour
• 6 – 7 tablespoons of oil
• 3 glasses of water or boiled vegetable broth
• 4 garlic cloves, grated
• Vinegar at will
• Salt and pepper

For the Meatballs

• 650 g. minced beef
• 3 slices of medium bread crumbs
• 1 onion, finely chopped or grated
• 2 tablespoons finely chopped parsley
• 1 teaspoon oregano
• 1 egg, beaten
• 2 tablespoons olive oil
• Salt, pepper
• Flour for the sprinkling
• Oil for frying

Execution

For Kasa:

1. In a saucepan, heat the oil and add the flour. Stir carefully until browned and fragrant.
2. Add the garlic and season with salt and pepper. Gradually pour in the boiling water or stock, stirring vigorously to create a thin cream.
3. Add vinegar to taste to give the sauce the necessary flavour, and check the salt and pepper. Leave the kasa aside until the meatballs are fried.

For the Meatballs:

1. Soak the bread crumbs in water until they rise. Wring it out well.
2. In a large bowl, mix the minced meat with the onion, parsley, oregano, egg, and 2 tablespoons of olive oil. Add the bread crumbs and knead well until all ingredients are combined. Let the mixture stand for 15 minutes.
3. Shape the meatballs and sprinkle them with flour. In a frying pan, heat enough oil and fry the meatballs until golden brown.

Serving: Once the meatballs are ready, add them to the pot with the saucepan and stir gently. Serve the dish hot and enjoy the authentic taste of the Macedonian tradition.
