About Katimeria
Katimeria, the traditional pancakes
Katimeria is an excellent example of culinary wisdom, a traditional dessert that is often equated with pancakes, but has its own unique character. Essentially, they are thin, round sheets of dough (rolled out by hand, like small pies), which are lightly baked and then fried in olive oil. Their secret is that they are made with pure ingredients and often contain raki or aromatic water, which gives the dough a special crispness and aroma. The way they are served is what makes them unforgettable: The hot katimeria, oiled and golden, are generously drizzled with thyme honey and sprinkled with cinnamon and walnuts or sesame seeds. The result is a taste experience where the crispy texture of the sheet is perfectly balanced with the rich sweetness of the honey. It is a festive dessert, full of the blessing and warmth of Cretan hospitality.
Ingredients
- two cups of flour
- 2/4 cup water
- 1/4 cup olive oil
- ½ tsp. salt
- 1/2 tsp vinegar
- oil for frying
Stuffing
- 350 g feta cheese
- an egg
- pepper
Execution
In a medium-sized container that closes tightly, put all the dough ingredients together. Close your container and, holding it tightly, shake it vigorously for a while. This is done to mix the ingredients. Open it and the dough will collect from the sides of the container and from the lid and a ball of dough will be made. If your dough seems dry, add a little water or oil. If it seems thin, add a little more flour; the dough should be pliable. Divide your dough into small balls and place them on a piece of parchment paper to wait.
Make your filling. Roll out the dough balls into small patties, up to half a finger thick. You can roll them out by hand or with the rolling pin we use to make patties.
Every time you open a pie, put the filling and close it by pressing the edges with a fork and put it back on the parchment paper. Once you are done, put oil in the pan and let it heat well. It is better to use a non-stick pan. Fry until they are golden brown and of course, turn them over
