About Snails Yachni
Snails Yachni is a traditional dish with roots in Macedonian cuisine, combining snails with rich aromas of onion, tomato and parsley. With its characteristic taste and texture, this dish is ideal for those seeking an authentic gastronomic journey through the flavours of Greek tradition.
Ingridients
- 2 large onions
- 2 bunch of spring onions
- 3 tomatoes, grated
- 1 kilo of snails
- ¼ cup Sugar
- Salt, pepper
- Some parsley, finely chopped
Execution
- Preparation of Snails: Wash the snails thoroughly and clean the shell of any debris. Remove the film from the opening. In a pot of hot water, submerge the snails and leave for a while. We remove those that have not sprouted their heads, as they are unfit for consumption. Drain the rest and add them back to the pot with a little water, 1 cup of vinegar and 1 tablespoon of salt. Bring to a boil, drain and rinse with cold water.
- Cooking: In a saucepan, heat a little oil and fry the onion until soft. Add the grated tomatoes, salt, pepper, parsley and sugar. Add the boiled snails and mix the ingredients for about 5 minutes. Add a little water and simmer for about an hour, until the snails are tender and the flavors have blended.
This dish is served hot, accompanied by bread to enjoy the delicious sauce.
